Say goodbye to boring snacks and hello to your new favorite freezer treat — the kind that tastes indulgent but is secretly packed with whole, feel-good ingredients. These Date Nut Butter Bars are rich, chewy, crunchy, sweet, salty, and oh-so-satisfying. Basically, it’s the love child of a candy bar and a superfood snack. And bonus: no baking required!
Here’s What You’ll Need For Date Nut Butter Bar:
👩🏽🍳 Ingredients:
• 12 juicy Medjool dates
• 1/3 cup of your favorite spreadable nut butter (almond, cashew, peanut — you pick!)
• 1/3 cup dark chocolate oat milk chips
• 1/4 cup milk chocolate oat milk chips
• 1 tbsp coconut oil
• 1/2 cup chopped nuts and/or seeds (pecans, peanuts, pumpkin seeds — whatever you’ve got!)
• Himalayan or Celtic sea salt (we love a little salty-sweet magic)
🍽️ Kitchen Tools:
• Parchment paper
• Cookie tray
• Measuring cup + spoon
• Spatula + spoon
• Knife
• Rolling pin or sturdy jar/glass (aka your new makeshift kitchen gadget)
✨ Let’s Make Magic:
1. Prep your space – Line a cookie tray with parchment paper and clear a spot in your freezer (future-you will thank you).
2. Open up those dates – Tear open each one like a little hotdog bun and lay them snugly side-by-side in rows of 3–4 on the tray. Think: no gaps, just sweet date love.
3. Smash time – Cover the dates with another sheet of parchment paper and flatten them using a rolling pin or the bottom of a glass until they’re a uniform base. Peel off the top parchment (it might stick a bit — no stress).
4. Spread the love – Warm your nut butter slightly if needed and spread a luscious layer right over the flattened dates. All the way to the edges, please.
5. Melt the magic – In a pan or microwave, melt your dark + milk chocolate chips with the coconut oil. Stir until silky.
6. Pour & swoon – Drizzle that melty chocolate goodness all over your nut butter layer. Let it drip down the sides for extra drama.
7. Top it like you mean it – Sprinkle your salt of choice (hello, salted caramel vibes) and a generous handful of chopped nuts or seeds. Pro tip: chopped peanuts = Snickers energy.
8. Freeze it up – Pop the whole tray in the freezer for a few hours until set.
9. Slice & snack – Once frozen, cut into pieces and enjoy right away. Store leftovers back in the freezer… if there are any leftovers.
